Share a Spoon: Soup's on!



Hi peeps!

It's Share a Spoon day over at Think Tank Momma's place. Momma hosts this little recipe swap every Thursday and it's a great place to get some yummy recipes.

This week, the theme is Souper Salad and Sammies. I told her I was looking for some good sandwich ideas and she hooked me up! She pretty much rocks!

I don't have any good sandwich ideas and I pretty much eat the same old romaine with light caesar when I have a salad. Boring, I know. I'm a creature of habit. What can I say?

Soup is one thing I have plenty of recipes for. MB and I can eat the heck out of some soup. We heart it. Big time.

This little recipe is one of my favorite winter soups. It's hearty enough to really fill you up and warm you up. It's also healthy and light and easy on your waistline.

Pasta e Fagioli Soup
1 lb lean ground turkey
1 (29oz) can diced tomatoes
2 (14oz) cans red kidney beans, drained
1 (14oz) can chopped spinach, drained
2 (14.5) oz cans chicken broth
1 (8oz) can tomato sauce
3 cups water
1 tbsp minced garlic
1 tbsp dried parsley
1 tsp garlic powder
1.5 tsp salt
.5 tsp ground black pepper
.5 tsp dried basil
.5 lb whole wheat seashell or small shaped pasta
Grated or shredded soy or fat free parmesan (optional)

In a large stockpot, brown the turkey. Add all the ingredients except the pasta. Bring it to a boil. Reduce heat and simmer for 40 minutes. Add the pasta and cook uncovered until pasta is tender.
Top with cheese, if desired, to serve.
Serves 6-8
